We noticed something years ago: coffee loses its voice when roasted without listening. Different origins need different approaches. A Kenyan SL-28 varietal demands patience and lower temperatures than a Sumatra Mandheling. Ignore these differences, and you're left with generic brown powder.
The Method Behind Our Madness
Our roastery operates on principles developed over decades of experimentation. Small batch sizes—never exceeding 15kg—allow precise temperature control throughout the roast cycle.
Every batch is tracked: We log ambient humidity, bean moisture content, first crack timing, development ratio, and final color reading. This data informs adjustments for subsequent roasts of the same origin.
We source directly from farms we've visited. This isn't romance—it's quality control. When you know the farmer, the processing method, and the terroir, you can predict how beans will behave under heat.
What Actually Happens During Roasting
Green beans contain complex carbohydrates and chlorogenic acids. As temperature rises, Maillard reactions begin around 150°C, creating hundreds of flavor compounds. At approximately 196°C, the beans undergo "first crack"—a audible pop as steam pressure ruptures the cell structure.
This moment defines everything. Stop too early, and you preserve acidity but miss complexity. Push too far, and you develop body while sacrificing origin character. The window is narrow: usually between 30 and 90 seconds after first crack, depending on the bean.
